Take a really hot pink Himalayan Salt Block and prep your dinner for the evening. Get creative or get back to basics. For fast and simple try chicken with asparagus or mushrooms. Chicken breasts are fabulous when cooked on a blazing hot Salt Block. I learned something really amazing from my Julia cookbooks. All seafood and meats should be rinsed and dried prior to cooking. Sooooo, rinse your chicken breasts in cool water, place on paper towels to pat dry, being careful to clean any surfaces that are exposed to the raw meat. Wash hands thoroughly. I think I sound like my mother in moments like this. Season the chicken with freshly cracked black pepper and drizzle with extra virgin olive oil. Once the Pink Himalayan Salt Block is preheated you are ready to cook. A fantastic addition to the chicken is asparagus grilled on the salt stone and nice baby bella mushrooms. Start the chicken first because the veggies will cook quickly. Before putting the chicken on the hot salt stone drizzle with a generous amount of olive oil. Take a summer evening with a very warm breeze. Down right hot and steamy after 3 minutes actually. Need something cool with some kick? Take 3 ounces of very fine tequila, Casa Noble or Don Modesto or your favorite. Pour over ice and swirl with a wedge of orange. Pour small amounts of the chilled fuerte liquid into your Salt Shotz and sip. Don’t forget to lick your lips. Use the cold condensation that has now formed on the outside of your glass and rub the inside of your elbows, wrists and the back of your neck. The liquid on the outside of the glass will help cool you down and the liquid on the inside will lessen the swelter factor. What a great way to replace the natural salt balance in your body!
What can heat in the house mean to a grilling and sizzling moment? It means that I can’t face the oven in this heat so I have a cure! Take wooden skewers that have been soaked in water for 15 -20 minutes. Run outside and crank that grill up on the patio with your Pink Himalayan Salt Block right on it! While the grill preheats outside, add to those wooden skewers deveined shrimp staggered with grape tomatoes, green pepper slices (or pablano peppers if you are feeling spicy), big fat mushrooms and some sweet onion chunks. I am talking about those Vidalia beauties from down South that my grandmother coveted all spring until summer heat truly bloomed! No seasoning necessary because we are ready to Rox! Salt Rox! Ready for the grill, take the olive oil and brush it on the salt block. Put those skewers on the salt block and close the grill to let the magic happen. After 3-4 minutes flip the skewers over once. When the shrimp are pink and the tomatoes are a little shriveled by the heat, remove the skewers to a serving plate and enjoy! You won’t believe the flavor!
While pink himalayan salt holds heat extremely well, it will also hold a chill. Chilling your salt slab in the refrigerator and using it to serve cold fruit or a lovely antipasta works well to cool down the end of the day heat. How does this work? Here’s the scoop. Before I leave in the morning I simply put my 8×8 salt block into the refrigerator for an 8 hour cool down. When I get home it is time to pull out the fresh cantaloupe, kalamata olives, fresh mozzarella, fresh basil and some nice cucumber slices. We like to have a bowl of each item with our toothpicks at the ready. Stab the choice morsel and drag it across the chilled salt slab for flavor. If you have a more formal setting, place your basil leaves on the slab, add a slice of fresh mozzarella on top with a cherry tomato or roma tomato sliced on top. Your guests will be enthralled! Try your hand at using any melon or cheese on the salt. Watermelon is delicious with fresh mint leaves for a flavorful pop. If you are in the mood for a little more sinful approach try scooping ice cream or sorbet onto the slab and then serve for a salty sweet combination! You are only limited by your imagination! When we discovered seafood grilled atop the pink himalayan salt slab, we turned into obsessed lovers of oceanic beauties. Entire evenings were devoted to the rinsing, caressing, patting dry preparation of seafood centered entrees. Our afternoon lovers’ chats spoke of rosemary or lemon thyme seasoned butter or infused olive oil. I dreamt of sauces, fresh herbs with mountains of irish butter cut with white wine and lemon juice, artfully drizzled over a grilled fillet of salmon, a steak of tuna or 6 ounces of baramundi. Sprinkled with capers and dotted with sauce we cannot make it to the table. No garnish just luscious goodness.
